Recipes Anyone???

I'm not sure many people are even looking at this blog, but if you are...I thought it might be fun to share some healthy recipes. Share one's that you have actually tried and like! Sometimes recipes that are low fat, low salt, low sugar, low carb, etc. are also low taste, low enjoyment. So, I will be thinking of my favorites and hopefully some of you share yours too!

  1. Here is my favorite recipe for Black Bean Burritos. They are meatless and low in fat (especially if you just put a little cheese.)

    Make some rice according to package directions but use either chicken stock as your liquid or add one chicken bullion cube to the water. Heat up one can of black beans. Dice tomatoes, avocados, white onion, and cilantro. Quater 2 limes. Shred some low fat jack cheese (or whatever kind you like.) Place everything in a tortilla (I've used whole wheat and it still is delish!)and squeeze a little lime inside.

    This is like the fastest meal and it is so yummy. We have it a least once every two weeks.

  2. This one is also a pretty healthy recipe for Chicken Sammies. I made a few changes when I made them. I used whole wheat sandwich buns and I tried to use as little olive oil as possible, especially when sauteing the veggies--you don't really need too much. I also used real tomatoes and a jar of fire roasted green chillies. Blair really liked these. The warm salsa on top is just a nice touch. Enjoy!
